Homemade Coconut Ice Cream with Chocolate Hazelnut Nut Butter

Happy Canada Day! On Canada’s 150th Birthday, why not enjoy a nice bowl of homemade Coconut Ice Cream with our High Protein Chocolate Hazelnut Nut Butter to celebrate this holiday, eh?

Ingredients:

1          can (400ml) of coconut milk

1          cup of almond milk

2          tbsp of raw sugar

2          tbsp of corn starch

1/2       tsp of vanilla extract

1/8       tsp of salt

4          tbsp of Pure Goodness Chocolate Hazelnut Butter

1          cup of chopped strawberries

1/4       cup of sugar heart (optional)

 

Instructions:

  1. Add the corn starch, raw sugar, vanilla extract and salt into the cold almond milk. Stir until the corn starch dissolves into the milk.
  2. Cook the almond milk mixture with medium heat, keep on stirring until the mixture is thickened.
  3. Cool down the mixture 20-25 mins, and mix with the coconut milk in a freezer safe container.
  4. Cover the ice cream mixture with food plastic wrap and keep it in the freezer for 4 hours.
  5. After 4 hours, use an electric beater to churn the mixture until it becomes creamy and smooth.
  6. Cover the ice cream mixture with food plastic wrap and put back in the freezer again.
  7. Repeat the step 5 every 2 hours until the ice cream is thick and creamy enough.
  8. When the ice cream is ready, put 1 tbsp of Pure Goodness Chocolate Hazelnut Butter in the bottom of a glass, scoop a ball of ice cream on it, add the strawberries as the middle layer, and scoop another ball of ice cream on it, garnish with sugar hearts or other cake decoration.
  9. Enjoy and celebrate the Canada Day.

 

Notes:

  1. For 4 servings.
  2. Beware of the condensed water on the plastic wrap during the churning process , it will become ice and make the ice cream not smooth enough.
  3. If you have an ice cream maker, it can save all the churning parts. Just put the mixture into the fridge for 2 hours, then pour it into the ice cream maker.
