Roasted Broccoli with Peanut Butter and Walnuts
You can use our Powdered Peanut Butter in the most versatile of ways like with the perfect plate of roasted broccoli and walnuts!
For the walnuts:
1/2 cup walnuts, cut into half
1 tbsp maple syrup
1/2 tsp salt
For the broccoli:
340g broccoli, cut into bite-size pieces
1 tbsp olive oil
1/2 tsp salt
2 tbsp Pure Goodness Powdered Peanut Butter
2 tbsp vegan butter
1 tsp brown sugar
1 tbsp soy sauce
1 tsp white vinegar
1 cloves garlic, minced
1. Preheat the oven to 325℉. Mix the maple syrup, salt with the walnuts and put them on a lined baking sheet. Toast the walnuts for 10 minutes, stirring occasionally to make sure the nuts don‘t burn. Lower the heat to 270℉ and toast for another 8 minutes. Let the walnuts cool down. Set aside.
2. Preheat the oven to 400℉, mix the broccoli with olive oil and salt on a lined baking sheet. Roast for 20 minutes, stirring occasionally.
3. Melt the vegan butter in a small skillet over medium heat. Mix in the Pure Goodness Powdered Peanut Butter, brown sugar, soy sauce, vinegar, and garlic. Bring the sauce to boil, then remove from the heat. Mix in the walnuts, and pour the sauce over the broccoli. Serve immediately.
