Easy Berry Muffins with Pure Goodness

These bite sized muffins are the perfect combination of a healthy and delicious. Try them fresh out of the oven or store them for the perfect afternoon snack!

 

Ingredients:

1 scoop Pure Goodness Unflavored Pumpkin Seed Protein

2 cups oat flour

2 tsp baking powder

1/3 cup coconut sugar

1 flax egg ( 1 tablespoon ground flaxseed and 3 tablespoons water)

1 tsp pure vanilla extract

3/4 cup almond milk

1/3 cup coconut oil

2 cups frozen berries

 

 

Directions:

  • Mix dry ingredients and combine with the wet ingredients
  • Gently fold in the berries into the mixture
  • Scoop the mixture into a muffin pan
  • Bake at 400 F for approx. 20 min.
