Vanilla Pumpkin Pancakes with Pure Goodness
Everyone loves pancakes! Why not try our delicious Vanilla Pumpkin Pancakes made with Pure Goodness Pumpkin Seed Protein, topped with antioxidant packed berries and loaded with nutrients. They make a great breakfast providing you with a satisfying meal that your taste buds will love and your body thank you for!
Ingredients:
- 1 and 1/2 cups almond flour
- 2 scoops Pure Goodness Pumpkin Seed Protein
- 1/2 teaspoon vanilla
- 2 tablespoons butter
- 1 organic egg
- 3/4 cup unsweetened almond milk
- 2 tablespoons baking powder
- 1/4 cup maple syrup
- 2 teaspoons apple cider vinegar
Instructions:
- Lightly scramble the egg in a medium bowl, then mix together all of the ingredients, reserving one tablespoon of butter.
- Melt the remaining butter in a pan or skillet on medium heat and pour about 1/4 cup of the batter into the pan.
- Let cook on medium heat for about 3 to 5 minutes, then check to see if the pancake is sturdy enough to flip by lifting an edge.
- Flip until cooked all the way through and golden on both sides
- Top with your favorite topping and fruits!
